About Sylvain Mosnier:
Sylvain Mosnier (pronounced ‘Monnier’), a motor mechanic, has produced Chablis since 1978 when his wife inherited her Chablis based family’s vineyards. He made quality wines but it was not until his daughter Stephanie came home from both winemaking college and from a period gaining experience in other well-known wineries that the quality really took a jump into the realm of the serious, unwooded, lower-to-midrange priced best values in all of Chablis.
The winery has been cleverly and strategically designed with rectangular tanks stacked on top of each other, acting as walls as high 8-15 metres, rather than the space consuming circular tanks that we are used to in this country. Every square meter of the comparatively tiny central area is used to its greatest effect. Very practical, very clever. The tasting cellar, though, is very old and underground in the old village of Beines, 6kms (or 8 minutes) to the west of Chablis.

Jean Defaix is one of the better known and longer standing Chablis producers and his only daughter married Daniel Dampt. Daniel began his own Domaine in Jean’s cellars and as the years passed, Jean’s grandsons, Daniel’s sons (who had both worked in either Australia or New Zealand for experience) also established their own brands from their inherited vineyards and these two, Vincent and Sebastien Dampt, organised to build a large new modern cement structure for a winery on the hills above the village of Milly. All four brands are now made in this winery with the grandsons now making and supplying the wines to maintain their legacy of the Domaine Jean Defaix wines, for which there is still significant demand around the world.The Dampts have built a large, very modern tasting room up a seriously wide staircase above some of the cellars and operational areas that has wall to wall windows on three sides looking into the hills, the distance and out over the village and into the Grand Cru slopes, in that order. The wines of Sebastien have been well reviewed for a least a decade by Allen Meadows of Burghound who says they are very good examples of the unoaked school, and great value for money at their, and these, prices.

One of the oldest and most respected names in Chablis with superb vineyard holdings reflecting the families very long history in Chablis, this branch of the Moreau family is headed by Christian and now his son Fabien who is the winemaker and manager.
Possessing magnificent vineyard holdings built up in some of the very best vineyard areas of Chablis by the family over generations (including nearly 8 hectares out of Chablis’ total 92 hectares of Grand cru), this small but remarkable estate has in just a few years established itself as one of the leading producers of Chablis producing consistently outstanding wines.
With relatively small (but very well sited) holdings in Petit, village and 1er cru Chablis, the highlights here are undoubtedly the amazing range of Grand cru vineyards including one single holding of approximately 3 hectares in Les Clos as well as .41 hectares of Clos des Hospices dans Les Clos plus slightly smaller holdings in Valmur, Blanchots and Vaudesir.
A combination of exceptional vineyard sites, old vines, brilliant wine-making and fastidious care in every step of production has resulted in these wines being regarded as amongst the very best produced in Chablis. Now the wines are gaining in even clearer expression with the vineyards having been certified organic since 2013 and together with some new tanks and other investments the results are showing clearly in the wines with each vintage. These are wines of precision, crystal clear typicity, and elegance, that will age classically while enabling tremendous enjoyment throughout their lives.

“20 treatments! And that was for less than half of what we produced in 2021. And the grand crus only 6 hl/ha – there will only be a single grand cru cuvée – and not a big one. My father and grandfather have no memory of blending the grand cru climats before. There was no Petit Chablis either, so I think that there will only be three cuvées next year…”

“In 2024, we lost 92% of the Grand Crus, 75% in Vaillons and 40% with the Village Crus. The most damage was on the Right Bank, which was hit by hail on May 1. On that day, we lost 80% in Valmur, Vaudésir and Petit Chablis. The second hail was in July. We also had some frost damage, mostly in Vaillons. We had rain until January 2025, so mildew was rampant. The 2023s from the excellent William Fevre have just been released to much acclaim and are superb buys. The Grand Crus from Fevre are always spectacular, these 2023s are no exception to the rule.
For Charles Curtis MW, Les Clos is “among the great wines of Chablis” and this 2023, “truly a wine for the ages”. The Valmur is excellent, while the Bougros Cote Bougros is “Chiselled and fine but still impressively powerful.”
Domaine William Fèvre works passionately to express Chablis’ terroirs, respecting the region’s environment and traditional practices. The team works throughout the year with exacting levels of care and precision to achieve excellence and reveal the true characteristics of each climat. As well as maintaining the deep-rooted values upon which the family has always insisted, the domain has managed to instill its vineyards and its wines with great vitality, thanks to modern technology and a resolute avant-garde vision. Style is an empty shell. Wine’s potential lies in its sensual response. For Chablis, this is derived from its terroir, which creates freshness and minerality.

Domaine William Fèvre is one of the most prestigious of all Chablis houses and, despite its relative youth, produces some of the finest expressions of Chardonnay from the north of Burgundy. The domaine holdings cover a wide range of vineyards, including numerous grand and premier cru Chablis sites.
The Fèvre family has been in Chablis for 250 years, but the domaine itself wasn't established by William Fèvre until 1959. William Fèvre himself sold the eponymous business in 1998 to Maisons et Domaines Henriot (which includes Champagne house Henriot, Beaune-based Bouchard Père et Fils and Beaux Frères).
Today, Domaine William Fèvre owns around 76 hectares (190 acres) in Chablis, 15 hectares (37 acres) of which are in grand cru vineyards including Les Clos, Vaudésir, Bougros and Preuses.
This variety of plots gives a complete and full profile of wines – for example, those from Bougros are typically full-bodied and rounded, while those from Vaudésir are more lively, fresh, and floral. A further 16 hectares (39 acres) of vineyards are classified as premier cru (these include Fourchaume/Vaulorent, Vaillons, Montmains, Montée de Tonnerre and Les Lys).
Historically, the wines were all aged in new oak, although more recently William Fère has changed to the use of barrels that are, on average, five years old, allowing for the quintessential Chablis freshness and minerality to shine through. Harvesting is all done by hand, with rigorous sorting for the premier and grand cru parcels.
Fèvre has used Diam agglomerated cork closures since 2005 to counter the issue of premature oxidation which has long been a problem in Burgundy's white wines.
Alongside the wines from village, premier cru, and grand cru plots in Chablis, Fèvre also makes a wine from the highly unusual Saint-Bris appellation, the only Sauvignon Blanc-based AOC in Burgundy.

Cool and pretty aromas combine notes of Granny Smith, petrol, just sliced citrus and a touch of seaweed character. The rich and agreeably textured, even succulent, medium-bodied flavors possess fine mid-palate density while exhibiting acceptable depth and persistence on the very supple finish. This easy-going effort should drink well shortly after release.

All comes from Beugnons, planted in 1959 and 1962. Possibly the palest but clearly the most concentrated in bouquet. Very disciplined though still with the generosity of the vintage, a suggestion of honeysuckle but only at the fringe. Fine energy at the finish. Drink from 2026-2030. Tasted Jun 2024.
